Comfort Food - Macaroni and Cheese

Serves a family of four.

Bring 2 quarts or two liters of water to a boil. Add 2.5 cups of elbow macaroni and follow box directions regarding cook time for your brand.

Shread 2 cups of aged cheddar cheese.
Finely dice 1/2 yellow onion ( 2.5 inch diameter )
Finely dice 1 medium clove of garlic.

When mac is finished, drain and place 1/3 of the mac in a layer in an oven-safe casserole bowl. Sprinkle on 1/3 of the cheese, 1/3 of the onion and 1/3 of the garlic. Add sea salt and pepper. Second layer over the first exactly the same way. Third layer also the same, but over the top layer, sprinkle Parsley flakes and Chives to taste. Pour 1/4 cup of 1 or 2 percent milk over the top layer. Bake in 325 degree oven for 35 to 45 minutes so the top layer of cheese is a nice golden brown.

Serve with a side of your favorite veggie - Asparagus tips works nicely.

Simple, quick and yummy for the entire family.
 
Yum .... I'm going to try that variation. We always had mac and cheese at home but mom made a cream sauce with cheese and poured it over the mac and baked it . This one sounds yummy with the garic and onion.

The Trinidians make it simiar only they pour a mixture of egg and milk over the top and don't put garic and onion in .
 
Yummy nothing like a good ol' mac cheese, although with the price of cheese the way it is, we only have it when cheese is on special these days.
 
I made this and it is good with the onion and garlic .... But then again you have to like onion and garlic. But it adds a great taste .:)
