I have s slightly different take on this gap theory... I base this on the book "God at War" by Gregory Boyd. I think that God created the earth, and it became a spiritual battleground. Thus, it became without form.
So God put Adam on the earth, and commanded him to "Be fruitful and multiply; fill the earth and subdue it; have dominion over the fish of the sea, over the birds of the air, and over every living thing that moves on the earth."
Why would a perfect planet need to be subdued? Also, the word used for "waters" and "sea", back in the days of it's writing was referring to "Yam" a malicious spiritual entity that was a body of water, constantly threatening to swallow up the land. There are many references in the Bible to God restraining Yam for the people.
I have a "spiritual warfare" worldview. I highly recommend "God at War" by Gregory Boyd to anyone, it's a great read, and a fascinating and revealing look at the Bible.
